Ingredients:
- 2 cups raw almonds
- 2 tbsp cannabis-infused coconut oil (see note below)
- 1/2 tsp salt (optional)
Directions:
- Preheat your oven to 350°F (175°C) and spread the raw almonds on a baking sheet. Roast the almonds for 10-15 minutes, until they are lightly toasted and fragrant. Let them cool.
- Place the almonds in a food processor and pulse until they are finely ground.
- With the food processor running, add the cannabis-infused coconut oil and salt (if using) and blend until the mixture is creamy and well combined.
- Taste the almond butter and adjust the seasoning if necessary.
- Transfer the almond butter to a jar and store in the refrigerator for up to two weeks.
Note: To make cannabis-infused coconut oil, you will need to decarboxylate your cannabis and then infuse it into the coconut oil. To decarboxylate, preheat your oven to 240°F (115°C) and spread your cannabis out on a baking sheet. Bake for 30-40 minutes, stirring occasionally, until the cannabis is dry and lightly toasted. Let the cannabis cool, then grind it in a coffee grinder or food processor. Heat 1 cup of coconut oil in a saucepan over low heat and add the ground cannabis. Simmer for 2-3 hours, stirring occasionally, then strain the oil through a cheesecloth into a jar. The cannabis-infused coconut oil can be stored in the refrigerator for up to 2 months.
